New Mexico Apple Cake
Makes
8 to 10 servings
Prep Time: 15 min.
Baking Time: 1 hr.
Ingredients:
- 3 - cups all-purpose flour
- 1 - Tablespoon baking powder
- 1/4 - teaspoon salt
- 1 - teaspoon baking soda
- 1 - Tablespoon ground cinnamon
- 3 - eggs
- 2 - cups sugar
- 1 - cup vegetable oil
- 2 - teaspoons vanilla extract
- 4 apples (unpeeled, cored, &
grated)
- 1 - cup pecans
- Lemon
Glaze (see below)
Directions:
Preheat oven to 350 F.
Grease and flour a 10-inch spring form tube or Bundt pan.
- In a medium-size bowl, you want
to sift together flour, baking powder, slat, baking soda, and
cinnamon. Set aside.
- In a large bowl, you want to
beat eggs. Add sugar and beat well.
- Add oil and vanilla
extract. Beat well.
- Pour in the flour mixture and
beat well.
- Add apples to batter and stir
well. Stir in pecans and mix.
- Pour into pan and bake about 1
hour or until top springs back.
- Allow to cool about 5 minutes
and turn out of pan. If you want, front with Lemon
Glaze.

Ingredients:
- 3/4 - cup confectioners' sugar
- 1 - Tablespoon milk
- 2 - Tablespoons lemon juice
Directions:
- In a small bowl, add
confectioners' sugar and you want to gradually blend milk and
lemon juice.
- You want to pour over cake.
