New Mexico Apple Cake
Makes 8 to 10 servings

Prep Time: 15 min.
Baking Time: 1 hr.

Ingredients:

  • 3 - cups all-purpose flour
  • 1 - Tablespoon baking powder
  • 1/4 - teaspoon salt
  • 1 - teaspoon baking soda
  • 1 - Tablespoon ground cinnamon
  • 3 - eggs
  • 2 - cups sugar
  • 1 - cup vegetable oil
  • 2 - teaspoons vanilla extract
  • 4 apples (unpeeled, cored, & grated)
  • 1 - cup pecans
  • Lemon Glaze (see below)

Directions:

Preheat oven to 350 F.  Grease and flour a 10-inch spring form tube or Bundt pan.

  1. In a medium-size bowl, you want to sift together flour, baking powder, slat, baking soda, and cinnamon.  Set aside.
  2. In a large bowl, you want to beat eggs.  Add sugar and beat well.
  3. Add oil and vanilla extract.  Beat well.
  4. Pour in the flour mixture and beat well.
  5. Add apples to batter and stir well.  Stir in pecans and mix.
  6. Pour into pan and bake about 1 hour or until top springs back.
  7. Allow to cool about 5 minutes and turn out of pan.  If you want, front with Lemon Glaze.

Lemon Glaze

Ingredients:

  • 3/4 - cup confectioners' sugar
  • 1 - Tablespoon milk
  • 2 - Tablespoons lemon juice

Directions:

  1. In a small bowl, add confectioners' sugar and you want to gradually blend milk and lemon juice.
  2. You want to pour over cake.
