Sandman’s Honey – Peanut Cookies

Makes about 75 cookies

Prep Time: 10 min
Baking Time: 12 min

Ingredients:

  • 1        cup butter
  • 1        cup honey
  • 1        cup sugar
  • 1        egg
  • 3        cup all-purpose flour
  • 2        teaspoon baking powder
  • 2        teaspoon ground ginger
  • 1/2     teaspoon vanilla
  • 1-1/2  cups peanuts, coarsely chopped

Directions:

Preheat oven to 375° F and grease 2 cookie sheets.

  1. In your electric mixer, add the butter and cream.
  2. Then you want to beat in the honey, sugar, and egg.
  3. In a separate bowl, sift together your flour, baking powder, and ground ginger.
  4. Slowly add this to the butter-honey mixture and thoroughly mix.
  5. Finally, stir in the vanilla and peanuts.
  6. Take a teaspoon and drop the dough onto the cookie sheets.
  7. Place in oven and bake 10 to 12 minutes.
  8. Remove and cool on wire rack.
