Grilled Chicken Breast de Ancho
Makes 4 servings

Ingredients:

  • Marinade:

    • 2 - teaspoon green onion, minced

    • 1 - teaspoon garlic, minced

    • 2 - Tablespoons ground ancho chile

    • 1 - lime, juiced

    • 1 - teaspoon ground black pepper

    • 2 - teaspoon salt

    • 1/2 - cup olive oil

  • Chicken

    • 4 - boneless and skinless chicken breast

Directions:

  1. In a glass or ceramic casserole dish, mix red onion, garlic, chile, lime, black pepper, salt and oil. Place the chicken breast into marinade mixture.
  2. Cover and marinade for 2 to 3 hours in refrigerator. Prepare a medium-hot grill fire and well oiled.
  3. Take the chicken out of marinade. Make sure you discard the marinade. (If you want to have the marinade as a dressing on the side, make a fresh mixture where you don’t mix with raw meat.) 
  4. Place the breast on the grill and cook 2 to 3 minutes on each side. You only want to turn once. You can test by cutting into the breast. You do not want any signs of pinkness.
