Mescal Mountain Chicken

Makes 4 servings
Prep Time: 20 min.
Baking Time: 40 min.

Ingredients:

  • 1 - teaspoon salt

  • 1 - teaspoon pepper

  • 1/8 - teaspoon thyme

  • 1/8 - teaspoon mace

  • 3 - pounds fryer chicken, cut up

  • 1 - cup all-purpose flour

  • 1/2 - cup olive oil

  • 1 - onion, chopped

  • 1 - clove garlic, minced

  • 1-1/2 - teaspoon chili powder

  • 1/2 - cup chicken broth

  • 1 - cup dry white wine

Directions:

Preheat oven to 350 degrees.

  1. In a small mixing bowl, add together the salt, pepper, thyme, and mace and mix. 
  2. Sprinkle spices over the chicken. Dredge in flour and brown on all sides in the oil using a heavy skillet. Move to a casserole dish.
  3. Into a skillet, add the onion, garlic, and chili powder and sauté for 5 minutes. 
  4. Stir in the broth and wine, cook 5 minutes longer, and pour over the chicken. 
  5. Bake in the oven for 40 minutes or until tender.
