Shrimp Quesadilla with Green Chile Dip

Makes 4 servings

Prep Time: 15 min
Chilling Time: 1 hr
Cooking Time: 12 min

Ingredients:

Green Chile Dip

  • 1/2  cup dairy sour cream
  • 1     green onion (including top), sliced
  • 1/4  cup diced green chiles
  • 2     Tablespoon chopped parsley
  • 2     Tablespoon chopped cilantro
  • 1/4   teaspoon dried leaf oregano
  • 1/8   teaspoon garlic salt

Quesadilla

  • 4     teaspoon butter or margarine
  • 4     flour tortillas (about 8-inch
  • 1     cup small cooked shrimp, patted dry
  • 1/4  cup diced green chiles
  • 1     cup shredded Cheddar cheese

Directions:

  1. To prepare Green Chile Dip: Process ingredients in a food processor until smooth. 
  2. Cover and refrigerate 1 hour.
  3. For each quesadilla, over medium heat, melt 1 teaspoon of the butter in a non-stick skillet. 
  4. Place tortilla in pan; when tortilla is slightly warm, place 1/4 cup of the shrimp, 1 tablespoon of the green chiles and a 1/4 cup of the cheese on half of tortilla. 
  5. Fold tortilla over cheese to make a half circle.
  6. Cook, turning as needed, until cheese is melted and tortilla is lightly browned on both sides for about 2 to 3 minutes. 
  7. Remove from pan and keep warm. 
  8. Repeat with remaining tortillas, adding 1 teaspoon butter to pan for each quesadilla. 
  9. Cut quesadillas into pie shaped wedges. 
  10. Serve with chile dip.
