Arizona Jerky with Eggs

Makes 4 to 6 servings

Prep Time: 10 min
Cooking Time: 10 min

Ingredients:

  • 1     pound jerky or dried chipped beef, shredded
  • 6     Tablespoon oil
  • 1     small onion, minced
  • 1     clove garlic, minced
  • 1/2  teaspoon paprika
  • 1     teaspoon vinegar
  • 4     Tbsp. cooked tomatoes, chopped
  • 2     eggs, slightly beaten
  • 6     tortillas

Directions:

  1. Pre-soak both jerky and chipped beef in water to cover to remove salt in beef and to soften jerky. 
  2. Fry the beef in hot oil with the onion, garlic, paprika, and vinegar until brown.
  3. Add the tomatoes and cook until almost dry. 
  4. Stir in the eggs, and cook about 4 minutes or until eggs are creamy. 
  5. Serve on tortillas.
