Arizona Jerky with Eggs
Makes
4 to 6 servings

Ingredients:
- 1 pound
jerky or dried chipped beef, shredded
- 6
Tablespoon oil
- 1 small
onion, minced
- 1 clove
garlic, minced
- 1/2 teaspoon paprika
- 1 teaspoon
vinegar
- 4 Tbsp.
cooked tomatoes, chopped
- 2 eggs,
slightly beaten
- 6 tortillas
Directions:
- Pre-soak both jerky and chipped
beef in water to cover to remove salt in beef and to
soften jerky.
- Fry the beef in hot oil with the
onion, garlic, paprika, and vinegar until brown.
- Add the tomatoes and cook until
almost dry.
- Stir in the eggs, and cook about 4
minutes or until eggs are creamy.
- Serve on tortillas.
