Grilled Santa Fe Turkey Sandwich
Makes 4 servings

Prep Time: 1 hr.
Cooking Time: 15 min.

Ingredients

  • Citrus Marinade
    • 1/3 - cup olive oil
    • 1/3 - cup lemon juice
    • 3 - clove garlic, finely minced
    • 1/4 - teaspoon salt
    • 1/8 - teaspoon black pepper
  • 1 - pound white turkey breast cutlets
  • 4 - rolls (your choice)
  • 1/4 - cup cream cheese spread (onion or other flavored)
  • 12 - slice jalapeno peppers, canned
  • Santa Fe Spice Rub
    • 3/4 - teaspoon cumin
    • 1/2 - teaspoon chili powder
    • 1/2 - teaspoon salt
    • 1/2 - teaspoon lemon pepper
    • 1/2 - teaspoon garlic, granulated
    • 1/2 - teaspoon paprika
    • 1/2 - teaspoon basil
    • 1/2 - teaspoon oregano
    • 1/8 - teaspoon cayenne pepper

Directions

  1. Into a large freezer bag, add olive oil, lemon juice, garlic, salt and pepper. 
  2. You want to place in the turkey chops. 
  3. Marinade for 1 hour or longer.
  4. To make the spice rub, in a small bowl, add the cumin, chili powder, salt, lemon pepper, garlic, paprika, basil, oregano and cayenne pepper. 
  5. Mix.
  6. Remove chops from marinade and sprinkle with 2-4 teaspoon Santa Fe Spice Rub.
  7. Place turkey chops on grill on a medium high heat. 
  8. Cover lid and cook for approximately 7 minutes on each side.
  9. Serve on your favorite roll with onion flavored cream cheese and sliced jalapenos.
