Toasted Jalapeno Egg Salad Sandwich
Makes 4 sandwiches

Prep Time: 20 min.

• 6 - hard-cooked eggs, peeled & diced

• 1/3 - cup real bacon bits

• 1/3 - cup sour cream

• 1/2 - teaspoon Dijon mustard

• 2-1/2 - teaspoon jalapenos, chopped and drained

• 3 - teaspoons fresh chives, chopped

• 1 - tablespoon red onions, chopped

• 1/4 - teaspoon salt

• 1/8 - teaspoon black pepper

• 1/2 - cup shredded Cheddar cheese

• 8 - sliced sourdough bread, toasted

Directions:

1. In a mixing bowl, add the eggs, bacon, sour cream, Dijon mustard, jalapenos, chives, red onion, salt and pepper. 

2. Mix coarsely; you do not want the mixture fine.

3. Take a tablespoon and spread egg salad on 4 toasted slices of sourdough bread. 

4. Sprinkle the cheese over the bottom half. 

5. Place top slices on the egg salad and cut into halves. 

6. Place on dish and serve.
