Smokey Santa Fe
 Makes 6 servings

Ingredients

  • 12 - slices bacon
  • 1/4 - cup mayonnaise
  • 1 - Tablespoon sour cream
  • 2 - teaspoon fresh lime juice
  • 1/2 - teaspoon ground cumin
  • 1 - teaspoon minced Chipotle chiles (canned in Adobo Sauce)
  • 1 - Tablespoon chopped fresh cilantro
  • 12 - slices multi-grain bread
  • 1 - Haas Avocado halved, seeded, peeled and sliced
  • 1 - large, ripe tomato sliced thin
  • 10 - ounces smoked turkey, thinly sliced

Directions

  1. In a large skillet over medium heat, cook the bacon until crisp. 

  2. Remove onto paper towels to drain.

  3. In a small bowl, blend the mayo, sour cream, lime juice, cumin, Chipotle chiles and cilantro.

  4. Place 6 slices of bread on a work surface and spread one side with the mayonnaise mixture. Place equal amounts of avocado, tomato and turkey on each slice of bread. 

  5. Cut bacon strips in half and lay 4 pieces onto each sandwich. 

  6. Top with remaining slices of bread and cut in half diagonally.
