Chicken and Three-Cheese Rice Wraps
Makes 6 servings

Prep Time: 5 min.
Cook Time: 30 min.

Ingredients

  • 1 - pound Fresh Ground Chicken
  • 1 - box Uncle Ben's® Country Inn® Three Cheese Rice
  • 3 - Tablespoons green chiles, chopped, canned
  • 1-3/4 - cups water
  • 1/2 - cup tomatoes, chopped
  • 12 - fat-free (or regular) flour tortillas, 8- to 10-inch

Directions

  1. Wash hands. Heat a large nonstick skillet over medium-high.
  2. Add chicken; cook, stirring frequently, 6 to 9 minutes or until chicken is browned and juices run clear. Wash hands.
  3. Add rice, seasoning packet, chilies and water to skillet; mix well.
  4. Bring to a boil. Reduce heat; cover.
  5. Simmer 10 to 15 minutes or until rice is tender and liquid is absorbed.
  6. Stir in tomato; let stand 5 minutes.
  7. Heat tortillas according to package directions.
  8. Spoon chicken mixture evenly down center of tortillas.
  9. Wrap or roll to enclose chicken mixture.
  10. Serve wraps with sour cream and salsa.
  11. Refrigerate leftovers.
