Baked Lima Beans

Makes 6 servings

Prep Time: 15 min
Cooking Time: 1 hr + 10 min
Baking Time: 30 min

Ingredients:

  • 2     cups dried lima beans
  • 1     small onion, chopped
  • 1     green pepper, chopped
  • 2     Tablespoon butter
  • 2     cup cooked tomatoes, strained
  • 1/2  teaspoon salt
  • 1/8  teaspoon cayenne
  • 1     teaspoon Worcestershire sauce
  • 1     cup grated American cheese

Directions:

  1. Soak dried lima beans in water overnight, cook 1 hour or until tender, and drain. 
  2. Sauté the onion and pepper in butter until tender. 
  3. Add the tomatoes, and simmer 10 minutes.

Preheat oven to 350ºF.

  1. Add the beans and seasonings, place with the cheese in alternate layers into a buttered casserole, and bake 20 to 30 minutes.
