Green Chile Stew with Pork
Makes 6 to 8 servings

Prep Time: 15 min.
Frying Time: 15 min.
Cooking Time: 1-1/2 hrs.

Ingredients:

  • 3 - pounds boneless pork, cubed (1/2-inch pieces)
  • 3 - Tablespoons peanut oil
  • 3 - stalks celery, chopped
  • 2 - medium tomatoes, diced
  • 7 - green chiles, roasted, peeled, seeded, and chopped
  • 4 - cloves garlic, peeled and crushed
  • Chicken broth to cover
  • Salt to taste
  • 1 - Salsa Jalapeno (if desired)

Directions:

  1. Use a frying pan to brown the pork in the oil. (Maybe 2 or 3 batches.)
  2. In a 3 or 4 quart pot, place the meat. Add the celery, tomatoes, chiles, and garlic.
  3. You want to deglaze frying ban with chicken broth and add to pot.
  4. You want to add enough chicken broth and/or water to just cover.
  5. Cover and simmer until stew is thick and the meat is tender or about 1-1/2 hours.
  6. Before serving, add salt to taste. Also, you can add Salsa Jalapeno (about a 1/4-cup) if desired.
