Chile Stew with Pork
Makes 6 to 8 servings
Prep Time: 15 min.
Frying Time: 15 min.
Cooking Time: 1-1/2 hrs.
Ingredients:
- 3 - pounds boneless pork, cubed (1/2-inch
pieces)
- 3 - Tablespoons peanut oil
- 3 - stalks celery, chopped
- 2 - medium tomatoes, diced
- 7 - green chiles, roasted, peeled, seeded,
and chopped
- 4 - cloves garlic, peeled and crushed
- Chicken broth to cover
- Salt to taste
- 1 - Salsa Jalapeno (if desired)
Directions:
- Use a frying pan to brown the pork in the
oil. (Maybe 2 or 3 batches.)
- In a 3 or 4 quart pot, place the meat. Add
the celery, tomatoes, chiles, and garlic.
- You want to deglaze frying ban with
chicken broth and add to pot.
- You want to add enough chicken broth
and/or water to just cover.
- Cover and simmer until stew is thick and
the meat is tender or about 1-1/2 hours.
- Before serving, add salt to taste. Also,
you can add Salsa Jalapeno (about a 1/4-cup) if desired.
