Banana - Almond Fudge Cake

Where To TailgateMakes 16 servings

Ingredients:

  • 4 - extra-ripe, medium bananas, divided

  • 1-1/2 - cup sugar

  • 1/2 - cup butter, softened

  • 3 - eggs

  • 3 - Tablespoon amaretto liqueur or 1 tsp. almond extract

  • 1-1/2 - cup all-purpose flour

  • 1/2 - cup unsweetened cocoa powder

  • 1 - teaspoon baking soda

  • 1/2 - teaspoon salt

  • 1/2 - cup chopped almonds, toasted and ground

  • 1 - square (1 ounce) semi-sweet chocolate, melted

Directions:

Preheat oven to 350� F. Grease 10-inch bundt pan.

  1. Quarter bananas and place in blender or food processor. Blend until smooth.
  2. In a large bowl, add sugar and butter. 
  3. Beat until light and fluffy. 
  4. Add the eggs and liqueur. Beat. 
  5. In a medium bowl, add the flour, cocoa powder, soda, salt and almonds. Stir.
  6. Stir in flour mixture to sugar mixture, alternate with 1-1/2 cups blended bananas, beginning and ending with flour mixture. Pour batter into bundt pan.
  7. Bake at, 45 to 50 minutes or until toothpick inserted in center comes out clean and cake pulls away from sides of pan. 
  8. Cool 10 minutes. 
  9. Remove cake from pan to wire rack to cool completely.
  10. In a small bowl, add the remaining blended bananas with melted chocolate. 
  11. Stir until completely blended. 
  12. Drizzle glaze over top and down sides of cake.
