Mango & Mixed Greens Salad

Ingredients:

  • Dressing Ingredients
    • 1/4 - cup vegetable oil
    • 2 - Tablespoons raspberry vinegar
    • 1 - Tablespoon honey
  • Salad Ingredients
    • 1 - Tablespoon Butter
    • 1/3 - cup coarsely chopped pecans
    • 1 - package (10-ounce) (6 cups) fancy mixed salad greens
    • 1 - large (1 1/2 cups) mango, peeled, cut into 3/4-inch chunks
    • 1 - medium (1 cup) red bell pepper, cut into 1/8-inch strips
    • 2 - ribs (3/4 cup) celery, sliced 1/4-inch

Directions:

  1. In a small bowl, mix vegetable oil, vinegar, and honey. Set aside.
  2. In a 10-inch skillet, melt butter until sizzling and add pecans.
  3. Cook over medium heat, stirring constantly, for 3 to 4 minutes or until pecans are golden brown. Remove from heat.
  4. In a large bowl, place pecans, salad greens, mango, bell pepper, and celery.
  5. Add dressing and toss to coat well.
