Jacob's Red Cabbage & Apples
Make 4 to 6 servings.

Ingredients

1 - onion, chopped

4 - tablespoon vegetable oil

4 - cups red cabbage, shredded

2 - tart apples, peeled and sliced

2 - tablespoons vinegar

1/2 - teaspoon caraway seed

1 - teaspoon pepper

1/2 - cup water

2 - tablespoons brown sugar

Directions
  • Using a heavy skillet, sauté onions in vegetable oil until onions are brown.  

  • Into the skillet, add the cabbage, apples, vinegar, caraway seed, pepper and water.  

  • Reduce temperature to low and simmer for 45 minutes or until tender.  You want to prevent sticking, so stir regularly. 

  • If it seems a little dry, you may add a little more water.  With about 5 minutes remaining, add the brown sugar.

Picnicking & Tailgating:  

This dish can be served hot or cold.  If you want, cook ahead of the picnic.  If you desire to do it as a cold dish, put in plastic container and add it to your ice chest.  However, if you want it warm, just microwave before bringing and place in hot thermal container.
