Jacob's Red Cabbage & Apples
Make 4 to 6 servings.
Ingredients
1 -
onion, chopped
4 -
tablespoon vegetable oil
4 -
cups red cabbage, shredded
2 -
tart apples, peeled and sliced
2 -
tablespoons vinegar
1/2
- teaspoon caraway seed
1 -
teaspoon pepper
1/2
- cup water
2 -
tablespoons brown sugar
Directions

Using a heavy skillet,
sauté onions in
vegetable oil until onions are brown.

Into
the skillet, add the cabbage, apples, vinegar, caraway seed, pepper and
water.

Reduce temperature to
low and simmer for 45 minutes or until tender.
You want to prevent sticking, so stir regularly.

If it seems a little dry, you may add a
little more water. With about 5
minutes remaining, add the brown sugar.
Picnicking
& Tailgating:
This dish can be served hot or cold.
If you want, cook ahead of the picnic.
If you desire to do it as a cold dish, put in plastic container and
add it to your ice chest. However, if you want it warm, just microwave before bringing
and place in hot thermal container.
