Alan’s Macaroni and Cheese

Ingredients

  • 1 - box (7-ounce) (2 cups) uncooked dried elbow macaroni

  • 1/4 - cup Butter

  • 2 - Tablespoons all-purpose flour

  • 2 - cups Milk

  • 3 - ounces cubed cream cheese

  • 1 - teaspoon Dijon-style mustard

  • 1/2 - teaspoon salt

  • 1 - package (8-ounce) (2 cups) Cheddar Cheese, cubed 1/2 inch

  • 1/2 - cup dried bread crumbs

  • 1 - Tablespoon Butter, melted

  • 1 - Tablespoon chopped fresh parsley

Directions

Preheat oven to 350°F. Cook macaroni according to package directions. Drain.

  1. In a 3-quart saucepan, melt 1/4 cup butter until sizzling and stir in flour.

  2. Cook over medium heat, stirring occasionally, until smooth and bubbly (1 minute).

  3. Add milk, cream cheese, Dijon-style mustard and salt.

  4. Continue cooking, stirring occasionally, until sauce is thickened for about 3 to 4 minutes.

  5. Stir in cooked macaroni and cheese.

  6. Spoon into ungreased 2-quart casserole.

  7. In a small bowl, stir together bread crumbs, 1-Tablespoon butter, and parsley.

  8. Sprinkle over macaroni and cheese.

  9. Bake for 20 to 25 minutes or until heated through and golden brown.
