California Macaroni

Baking Time: 50 min.

Ingredients:

  • 2 - Tablespoons butter, softened
  • 2 - cups milk
  • 1-1/2 - Monterey Jack cheese, cubed
  • 2 - cups macaroni, uncooked
  • 1/2 - teaspoon salt
  • 1/2 - teaspoon dry mustard
  • 2 - Tablespoons green chilies, chopped
  • 2 - eggs, beaten
  • 2 - Tablespoons butter, melted
  • 1/2 - cup bread crumbs

Directions:

Preheat oven to 350° F.

  1. In a large mixing bowl, you want to add butter (softened), milk, cheese, macaroni, salt, mustard, chilies, and eggs. 
  2. Pour into a 1-1/2 quart casserole dish.
  3. In a small bowl, mix butter (melted) and bread crumbs. Sprinkle over casserole.
  4. Bake 40 to 50 minutes or until browned.
