Toasted Onion Mashed Potatoes

Ingredients

5 - medium (about 10 cups) potatoes,
cut into eighths

Water
-
2 - teaspoons salt

2 - Tablespoons butter

3 - cups coarsely chopped onions

2 - Tablespoons cold butter

1/2 - cup warm milk
-
3/4 - cup sour cream
-
Salt (to taste)

Pepper (to taste)
Directions

Place potatoes in 4-1/2-quart saucepan or
Dutch oven. Cover with cold water; add salt.

Bring to a boil over high heat. Reduce heat
to medium and boil potatoes for 15 to 18 minutes or until fork tender.
Drain.

Meanwhile, melt 2 tablespoons butter until
sizzling in 10-inch nonstick skillet and add onions.

Cook over medium heat, stirring
occasionally, for 8 to 10 minutes or until onions are brown. Set aside.

Place cooked hot potatoes in large bowl.
Mash slightly with fork. Beat at medium speed, adding cold butter 1
tablespoon at a time, until mixed.

Continue beating, gradually adding browned
onions, cold butter, warm milk, and sour cream well mixed.

Add salt and pepper to taste. (DO NOT
OVERBEAT.) Serve immediately.
