Toasted Onion Mashed Potatoes

Makes 12 servings:
Budget $mart $0.41 per serving*

Prep Time: 10 min.
Cooking Time: 23 min.

Ingredients

  • 5 - medium (about 10 cups) potatoes, cut into eighths

  • Water

  • 2 - teaspoons salt

  • 2 - Tablespoons butter

  • 3 - cups coarsely chopped onions

  • 2 - Tablespoons cold butter

  • 1/2 - cup warm milk

  • 3/4 - cup sour cream

  • Salt (to taste)

  • Pepper (to taste)

Directions

  1. Place potatoes in 4-1/2-quart saucepan or Dutch oven. Cover with cold water; add salt.

  2. Bring to a boil over high heat. Reduce heat to medium and boil potatoes for 15 to 18 minutes or until fork tender. Drain.

  3. Meanwhile, melt 2 tablespoons butter until sizzling in 10-inch nonstick skillet and add onions.

  4. Cook over medium heat, stirring occasionally, for 8 to 10 minutes or until onions are brown. Set aside.

  5. Place cooked hot potatoes in large bowl. Mash slightly with fork. Beat at medium speed, adding cold butter 1 tablespoon at a time, until mixed.

  6. Continue beating, gradually adding browned onions, cold butter, warm milk, and sour cream well mixed.

  7. Add salt and pepper to taste. (DO NOT OVERBEAT.) Serve immediately.
