Spicy Sweet Potatoes & Apples

Ingredients:

  • 1/3 - cup Light Butter
  • 1/4 - cup water
  • 2 - Tablespoons orange juice
  • 1 - Tablespoon stone ground mustard
  • 1 - Tablespoon honey
  • 1 - teaspoon freshly grated orange peel
  • 1/4 - teaspoon salt
  • 1/8 to 1/4 - teaspoon ground red pepper
  • 2 - large (4 cups) orange sweet potatoes or yams, peel, cubed 1-inch
  • 3 - small (3 cups) tart cooking apples, cubed 1-inch
  • 1/4 - cup chopped pecans

Directions:

Preheat oven to 375°F.

  1. In a 13x9-inch baking pan, melt butter in oven for 2 to 4 minutes.
  2. Stir in water, orange juice, mustard, honey, orange peel, salt, and red pepper.
  3. Place sweet potatoes in butter mixture and toss to coat.
  4. Cover and bake for 25 to 35 minutes or until fork tender.
  5. Stir in apples and pecans. Continue baking, uncovered, stirring once, for 15 to 20 minutes or until apples are tender.

Alan's Kitchen Tip: Although sweet potatoes and yams are similar in many ways, and therefore often confused with one another, they are different plant species. Yams may be substituted for sweet potatoes in most recipes.
