Makes 6 servings

Here is an easy yam or sweet potato recipes we feel brings out their best character.

Ingredients

6 - medium yams (or sweet potatoes)

1/2 - cup butter

1 - cup brown sugar, firmly packed

1/4 - cup water

Directions

Preheat oven to 350º F.

  • In a large saucepan at moderate heat, add yams (or sweet potatoes), cover with water and boil 30 minutes in water to cover.
  • Allow them to cool.  Melt butter.
  • In another saucepan at low heat, add the sugar and water and melt the sugar.
  • Butter an 11x13-inch baking pan.  Peel yams (or sweet potatoes) and cut lengthwise.
  • Lay the potatoes in the pan in one layer.  Spoon the melted butter.  Then spoon the melted sugar.
  • Baked 35 to 45 minutes or until candied.

Picnicking & Tailgating
