Hot Garlic and Bacon Potato Salad

Here is a hearty "German-style" warm potato salad that is quick cooking with a different twist.

Prep Time: 10 min.
Cooking Time: 12 min.

Ingredients:

  • 2 - pounds Idaho or red bliss potatoes, sliced 1/2-inch thick

  • 3 - slices bacon

  • 1/3 - cup green bell peppers, chopped

  • 1/4 - cup red onions, chopped

  • 1 - teaspoon California style garlic pepper

  • 3 - Tablespoon red wine vinegar

Directions:

Cook potatoes in boiling, salted water until just tender, about 5 minutes. Set aside.

  1. In a large skillet, cook bacon until crisp.  Remove bacon and drain on paper towels.  Add peppers and onions to bacon fat. 

  2. Sauté vegetables for 2 to 3 minutes.   Carefully add garlic pepper and vinegar. 

  3. Crumble in cooked bacon.  Toss in potatoes and mix to coat well, being careful not to break up potatoes.  Serve warm.
