Mushroom-Rosemary Mashed Potatoes

Makes 8 servings Side Dish Recipes from AlansKitchen.com

Ingredients:

  • 1 - package (22-ounces) frozen mashed potatoes

  • 2-1/3 - cups milk

  • 1 - teaspoon salt

  • 2 - Tablespoon butter or margarine

  • 2 - package (8-ounces) whole mushrooms, coarsely chopped

  • 4 - garlic cloves, pressed

  • 1 - cup whipping cream

  • 2 - teaspoon fresh or dried rosemary, minced

  • 1 - teaspoon pepper

Directions:

Preheat oven to 350° F. and lightly grease 11x7 inch baking dish.

  1. In a 2-quart microwave-safe bowl, add the mashed potatoes, milk and salt.  On HIGH, Microwave for 15 minutes and stir once.  Let stand 2 minutes.

  2. In a large skillet over medium-high heat, add butter and melt.  Next, add mushrooms and garlic, and sauté for 5 minutes or until tender.  Then add whipping cream, rosemary, and pepper and cook for 12 minutes or until thickened. Occasionally stir.

  3. Evenly spread the mushroom mixture over the bottom half. Spread remaining potatoes over the mushroom mixture.  Place in oven and bake for 20 minutes.

Picnicking & Tailgating

You want to make this recipe a day or two ahead.  Just heat and place in thermos or thermal containers and head to the picnic or tailgate site.  Just serve out of the thermal container or pour from the thermos.
