Raw Fried Potatoes

Make 4 servingsSide Dish Recipes from AlansKitchen.com

Ingredients:

  • 6 - potatoes

  • 6 - slices bacon

  • 1/2 - teaspoon celery seed

  • 1/2 - teaspoon salt

  • 1/4 - teaspoon pepper

  • 1 - teaspoon parsley, minced

  • 1/8 - teaspoon paprika

Directions:

  1. In a bowl, peel the potatoes, cover with ice, and let stand a few minutes.  Drain.  Dice the bacon. 

  2. In a skillet at moderate heat, quickly fry bacon and remove from the fat.  Place the bacon on paper towels to absorb the grease.  Slice the potatoes and fry in bacon drippings. 

  3. Cover, fry the potatoes, and turn to prevent burning.  Sprinkle in the celery seed, salt, pepper, parsley and paprika.  Add the bacon, stir and serve.
