Rock Gap Pineapple Yams
Makes 4 servings

Prep Time: 5 min.
Cooking Time: 10 min.

Ingredients

4 - Tablespoon butter
3 - Tablespoon brown sugar
2 - Tablespoon light cream
4 - slices pineapple
2 - cup mashed cooked yams (or sweet potatoes)
1/4 - cup milk
1/2 - teaspoon salt
1/2 - teaspoon pepper

Directions

  • Into a small saucepan, add 2 tablespoons butter and brown sugar. 
  • Over low heat, blend. 
  • Stir in the cream. 
  • Now add a slice of pineapple at a time, turning so that you glaze both sides. 
  • Remove pineapple slices to a heated plate or thermal container.
  • In the saucepan, add the yams, milk, 2 tablespoons butter, salt, and pepper. 
  • Beat the ingredients until they become fluffy. 
  • Now spoon ingredients over pineapple slices and serve.
