Rock Gap Pineapple Yams

Ingredients
4 - Tablespoon butter
3 - Tablespoon brown sugar
2 - Tablespoon light cream
4 - slices pineapple
2 - cup mashed cooked yams (or sweet potatoes)
1/4 - cup milk
1/2 - teaspoon salt
1/2 - teaspoon pepper
Directions
- Into a small saucepan, add 2
tablespoons butter and brown sugar.
- Over low heat, blend.
- Stir in the cream.
- Now add a slice of pineapple at a
time, turning so that you glaze both sides.
- Remove pineapple slices to a heated
plate or thermal container.
- In the saucepan, add the yams, milk,
2 tablespoons butter, salt, and pepper.
- Beat the ingredients until they
become fluffy.
- Now spoon ingredients over pineapple
slices and serve.
