Sweet
Potato Balls
Makes
about 10 balls.
Ingredients

- cups mashed sweet potatoes
1
- egg, beaten

tablespoon butter, melted

teaspoon lemon juice

teaspoon parsley,
minced
Batter
1/4

cup bread crumbs
1/2

teaspoon salt

- egg, beaten
Directions
- In
a mixing
bowl, combine the mashed sweet potatoes, egg,
butter, lemon juice, and parsley and form into balls.
Let stand.
- In
a small mixing
bowl, mix the bread crumbs and salt.
In another bowl, add the egg.
- Roll balls into bread crumbs, then into the egg, and
back into the bread crumbs.
- In a deep fryer, pour in high quality fat with a
“high smoke point” and temperature at 360° F.
- Fry
quickly in deep, hot fat.
Drain on paper towel and serve.
