Sweet Potato Balls
Makes about 10 balls.

Ingredients

2 - cups mashed sweet potatoes

1 - egg, beaten

1 - tablespoon butter, melted

1 - teaspoon lemon juice

1 - teaspoon parsley, minced

Batter

1/4 - cup bread crumbs

1/2 - teaspoon salt

1 - egg, beaten

Directions

  • In a mixing bowl, combine the mashed sweet potatoes, egg, butter, lemon juice, and parsley and form into balls.  Let stand.
  • In a small mixing bowl, mix the bread crumbs and salt.  In another bowl, add the egg.  
  • Roll balls into bread crumbs, then into the egg, and back into the bread crumbs.  
  • In a deep fryer, pour in high quality fat with a “high smoke point” and temperature at 360° F.
  • Fry quickly in deep, hot fat.  Drain on paper towel and serve.
