Sweet Potatoes with
Pineapple – Orange Glaze

Preheat oven
to 325° F. and butter
flavored non-stick spray casserole dish.
- In a large pot, add water, sweet
potatoes, salt and pepper.
- Over medium heat, bring to a boil
and cook until fork tender.
- Remove and drain in a
colander.
- Pour under cold water to stop the
cooking.
- When cool, peel sweet potatoes and
slice into thick slices.
- Place in a large mixing bowl.
- Add the sweet potatoes, orange
marmalade, Pineapple – Papaya Marmalade, and orange juice. Toss
lightly.
- In the casserole dish, layer the
potato mixture. Sprinkle with salt and dot with butter.
- Bake
for 30 to 40 minutes or until browned and candied.
