Deviled Tomatoes

Ingredients

  • Sauce

    • 2 - Tablespoons butter

    • 1 - teaspoon confectioners' sugar

    • 1 - teaspoon dry mustard

    • 1 - teaspoon salt

    • 1/8 - teaspoon pepper

    • 1 - yolk, hard-cooked egg, mashed

    • 1 - raw egg, beaten

    • 1 1/2 - Tablespoon hot vinegar

  • Coating

    • 1/4 - cup flour

    • 1/8 - teaspoon salt

    • 1/8 - teaspoon pepper

  • 3 - tomatoes, cut in thick slices

  • 4 - Tablespoons butter

Directions

  1. Over low heat in a sauce pan, melt butter.  To melted butter, add sugar, mustard, salt, pepper, egg yolk, raw egg, and vinegar.  
  2. Stir mixture until thick and set aside.
  3. In a small dish, mix flour, salt and pepper.  Coat each tomato slice in the mixture.
  4. In a frying pan, melt butter.  
  5. Brown both tomatoes slice sides until golden brown.  Pour sauce over tomatoes and serve. 

Picnicking & Tailgating:  

Heat in microwave before leaving and place in thermal container.  Heat sauce separately and place in thermal container.  At the picnic or tailgate site, combine and enjoy.
