Side Dish & Vegetable Recipes from AlansKitchen.comIngredients
  • 6 - ounces tortilla chips

  • 1/2 - cup cooked pinto beans

  • 1/4 - cup diced green chiles, drained

  • 1 - Tablespoon green olives, chopped

  • 1 - Tablespoon ripe olives, chopped

  • 1 - cup grated cheddar cheese

  • 1 - cup grated Monterey Jack cheese

  • 1/2 - cup fresh cilantro, chopped

Directions
  1. Arrange the tortilla chips on a microwave plate.  

  2. You want to sprinkle the beans, chiles, olives and cheese over the chips.  Cook on high for 3:30 minutes.

  3. Remove from microwave, garnish with cilantro.  

  4. Have side dishes of sour cream and salsa.  See Chipotle or Salsa Fresca.
