Pork & Beans

Soak dried beans overnight.
Preheat
oven to 250
degrees F.
- Next day, drain and
place in large pot with water to cover. Bring to a boil and reduce
heat to a simmer. Cook until beans swell and skins begin to crack.
- In a frying pan,
melt butter and brown chops.
- In a small mixing
bowl, remove 2 cups of water beans have been cooking in. To it, add
the molasses, sugar, ginger, salt, and pepper.
- Strain pork and
beans. In a large baking dish, add them. Pour molasses mixture over
pork and beans. Cover and bake 4 hours.
- You may need to add additional
water during baking. It is best to use the bean water. For the
last hour of baking, remove cover and finish baking.
This dish can be served both hot and cold. If
you make the dish a day or two ahead, just heat (on stove or in microwave)
and place in thermal container.
If you like it
cold, place in plastic container and seal. Place in ice chest.
Pour into a serving
bowl and let your family and friends enjoy at the picnic or tailgate party.
