Pan Fried Potatoes with Red Chile

Ingredients:

Potatoes

water

onion,
chopped

garlic
cloves, minced

- Tablespoons
butter

- Tablespoons
New Mexico red chiles, diced

teaspoon
salt

teaspoon
pepper
Directions:
-
Boil potatoes in
quart of water until soft.

Cool
and slice, leave skin on.

In a skillet,
melt butter.

Add sliced
potatoes into skillet.

Add
remaining ingredients.
-
Let
potatoes brown.

Their edges
should be crispy.
-
Turn over
and allow the other side to become crispy.
